Tonight I made a tasty pork chop recipe. I found this recipe in the September issue of Rachel Ray magazine. The recipe was titled Grilled Pork Chops with Fresh Plum Sauce. It just jumped out at me since we have been eating plums lately since it is summer. It was relatively easy to make and everyone enjoyed the meal!

If you want to try it, here is what we did…

Heat an outdoor grill or a grill pan over medium-high. Season 3-4 pork chops on both sides with salt and pepper. In a shallow dish, combine about 4 tbsp. olive oil, 2 tablespoons of balsamic vinegar, 2 tablespoons of fresh chopped rosemary, 1 tablespoon of Worcestershire sauce and 2 large chopped garlic cloves. Add the pork chops to the mixture and turn to coat

In a medium bowl, combine the remaining 2 tbsp. olive oil, 1 tbsp. balsamic vinegar and 1 teaspoon of sugar. Toss the dressing with 1 + pound of ripe plums that have been chopped, 1/2 small chopped red onion, 1/2 cup fresh chopped basil and 1/4 cup chopped fresh mint. Season with salt and pepper.

Grill the pork chops, turning once, until an instant-read thermometer inserted into the center registers 145 degrees , about 10 minutes. Divide the chops among the plates and top with the plum sauce. Enjoy!
