Tonight we enjoyed Bombay Shrimp Curry with Coconut Rice. I dug the recipe out of the latest Cooking Light magazine Theodore complained about the coconut in the recipe all week but when he sat down to eat it, he loved it. Amazing how often you can get surprised if you are willing to try something new! Paula also loved the dish although she did not like the fact that I did not pull the shells off the tail of the shrimp. Best of all, this recipe was so easy to make, especially since we used leftover rice pilaf instead of the instant rice. It turned out to be an incredibly easy and tasty recipe on a Friday night when I just want to relax!
