We ate Chicken Kebabs and Nectarine Salsa tonight. The recipe was found in the July 2011 Cooking Light magazine. Very  tasty dish. It was a bit of a labor of love since it required a lot of chopping – onions, nectarines, red bell peppers – and Theodore is still working on his skills with a knife. But when the salsa was finished, it was quite tasty. I only added 1 teaspoon of jalapeno since Paula doesn’t like it too spicy. I think that 2 teaspoons would not have been too much. The recipe calls for boneless chicken breasts but we just used chicken tender pieces since they were easier to cut up and put on the skewers. The marinade for the chicken was really tasty and a hit with everyone. TJ’s best friends, Sam and AJ, were over for dinner and they liked it a lot. No leftovers tonight. Just some salsa that we could use to make the dish again in about a week.
