The Boy Scout motto is always a good one to keep in mind when you are busy. Today we had tornado warnings in our area all day long and our scheduled dinner out was canceled when the meetings were called off. We just stayed home and enjoyed artichoke and olive ravioli. I keep 4-5 containers of frozen ravioli and several bottles of Barilla tomato sauce on hand for just such times. Tonight I covered half the ravioli in tomato sauce and  half in a sprinkling of olive oil. Due to our preparedness, we made a simple, yet tasty meal in a short amount of time. To make the meal even better, Paula threw together a caprese salad for the all of us. For those of you who are not familiar with that incredible salad, you just need to cut up or slice fresh tomato, fresh mozzarella and fresh basil. Paula usually sprinkles some good balsamic vinegar on top when she is finished. Delicious!!! Perhaps the best summer salad that one can have. We lived on those for our lunches when we traveled in Italy! Try them since tomatoes are still in season for a little while longer!
