Tonight we went really easy for dinner. We had veggie flatbread with hummus. Turn on the oven to 500 degrees. Then you start with either pita or naan bread. Coat them with olive oil.  Spread each bread with hummus. We bought a small (approximately 1 cup) container at the store. Shred some fennel and carrots. Cook them in a frying pan with just a little olive oil for several minutes gently heated. Add them to the hummus on each bread. Chop up some roasted red peppers. We used canned red peppers tonight to make it faster. Add these to the breads. Bake the breads in the oven for 10 minutes. If you wish, you could go the extra mile and roast a few vegetables such squash and cut them up and place them on top as well. Everyone enjoyed the meal. I had mine with an amber ale, which provided just the right amount of maltiness to the flavors of the dish.  Best of all, this dish required all of 25 minutes to prepare and that included the 10 minutes in the oven!
