Today we had some potato-leek soup that Theodore made for us on Sunday. This is definitely one of our favorite soups of all time. And what makes it so wonderful is that it is not only tasty but it is easy to make. There are lots of recipes that you can find for this soup. We have basically made ours by using all of those that we have come across over the years and just doing with it as we please.

To make the soup you just need 1-2 pounds of leeks, 2-3 pounds of potatoes and chicken broth. (We add enough to cover all the potatoes and leeks after they have been cooked in the pot for a few minutes.) Cook everything together for about 20-25 minutes until the potatoes are cooked. Then you just puree everything using a regular or hand blender. If you want to make it fancier, you can add some cream but we don’t usually bother. We also don’t usually add any salt or pepper although we keep it on hand when we serve it. Sometimes the chicken broth does not have enough salt in it so a few turns of the salt mill is needed.

We served our soup with a salad and some garlic bread. Great meal and easy to make. When we make it, we always make enough for 2 meals. So, depending on how much you eat at dinner, you can increase the quantities to serve your purpose.
