Tonight we made our own twist on turkey tetrazzini. We had some leftover roast chicken in the freezer so we took it out and found some linguine, a can of peas and some corn flake breadcrumbs (since we were out of parmesan cheese…). We cooked up the chicken in the large saucepan with the few remaining mushrooms. Pulled out the chicken and mushrooms when they were cooked, made a simple cream sauce with milk and flour and a little bit of thyme. All of this was done while the linguine was cooking. When the pasta was done, we mixed everything together, put in in a 9×12 pan and cooked it in the oven for 15 minutes. It was quite tasty. Paula liked it because it made her feel like she was enjoying some comfort food. I liked it because it was filling and I was hungry. Theodore did not rave about it but I think that it was due to the fact that it had a few mushrooms hidden in it as well as the fact that he ate a lot of stuff at a party in school earlier today… Oh.Well. Two out of three ain’t bad. I would make it again. It might be a bit more flavorful with the parmesan cheese but we will have to wait to find out another time.
