Tonight we had a “simple” meal – at least by our standards. I was at a meeting all day and had another meeting in the evening. So our window for having dinner together was quite short.
We enjoyed steak and roasted root vegetables. I marinated the steak in the morning with a marinade that we had in the refrigerator. Paula picked Theodore up at school on her way home after being at the hospital for one of her rare days of working “normal” hours. When she got home, she cut up the vegetables – in this case, fresh beets, sweet and white potato – tossed them with some olive oil and put them in the oven at 450 degrees F. While the vegetables were roasting, Paula cut up the beet greens. During the last 10 minutes or so, Paula braised the greens until they wilted and I cooked the steak on the grill until it was medium-rare. In less than 1 hour, we had a great meal!
So simple and so delicious.
