Tonight we had a great chicken meal. Paula found the recipe (with a cute title…) in Rachel Ray magazine. It was called No-Peeking Peking Chicken. The meal was perfect for today since we just put it in the crock pot when we left for work and had a tasty meal ready when got home. The flavors were terrific – scallions, ginger, garlic, pepper, honey, soy sauce and toasted sesame oil. The original recipe called for bone-in chicken thighs but we used boneless ones that were on sale at the local co-op. That made the meal even easier. We served it over some sticky rice and it was just amazing. Not quite as good as the Beijing Chicken that Theodore and I had a few years ago on our trip to China but it was an easy substitute. Everyone agreed that this recipe needs to be made again. Paula forgot to make the beets that we bought to go with it so we will have those another night this week. We talked about veggies to go with this and Theodore and I felt like some braised greens would make a nice side dish. So would’ve the beets but we will just have to wait until next time to try them with this dish…
