Tonight we made the Chili Corn Chip “Pie” again. Paula had made some ground beef last week when we expected a lot of people for dinner on Friday. When that did not happen we had to figure out something to do with the cooked meat. The chili corn chip recipe was perfect. Besides the ground beef, we just had to add some garlic, chopped onion, cumin, 1 tablespoon tomato paste, 1 cup beef broth and 1 can of diced tomatoes. Really simple and really tasty. After everything was cooked in one pan, we served it up in some soup bowls. First, you lay down a layer of corn chips on the bottom and then add the meat mixture. Finally you just have to top it with cheese and anything else that you might have around such as avocado, sour cream, salsa or whatever… All in all, it was a great way to use up the extra ground beef.
