Tonight we had White Bean and Fennel Stew with Spicy Italian Sausage. I saw the recipe in the newspaper last week and we decided to give it a try since we needed some meal to fill out the week. Paula made it this afternoon and it was quite easy to throw together. All you need to make the stew is 1 pound of sausage, 1 large onion, 1 fennel bulb, garlic, 2 cans of cannelini beans, 1 can diced tomatoes, 32 ounces of chicken broth and 1 pkg of frozen spinach leaves. First you brown the sausage in a large soup pot. Then you add the onion, fennel and garlic and cook the vegetables for another 5-7 minutes. Add the remaining ingredients and stir to mix everything up. Cover and bring to a boil. After it reaches a boil, uncover and simmer for about 15 minutes. Season with salt and pepper and serve. This meal could be served with bread if you have some good bread available. You could also switch the chicken broth for vegetable broth if you wanted to make it a vegetarian meal. All in all, this was a fast and incredibly flavorful meal! Try it when you are in a hurry. We even had leftovers!
