Tonight we ate at my mother’s house and we asked her to make Chicken Tostadas with Avocado Dressing. We found the recipe in the September issue of Cooking Light. It was quite good. The chicken was rotisserie chicken that was shredded and then cooked in a skillet with some garlic, jalapeno and some chopped red pepper. Once that was cooked, the dressing was made with avocado, 2 tbsp. lemon juice, 2 tbsp. olive oil, 2 tbsp. chicken broth and 2 tbsp. sour cream along with a little red pepper to spice things up. The tortillas were cooked in a skillet until browned and then the chicken was placed on top. All of this was served with the avocado dressing, shredded lettuce, Monterrey jack cheese, and chopped tomato. It was a very delicious meal!
