Tonight we ate at my mother’s apartment so that I could spend a little time with my father. We gave her a recipe from our recent Rachel Ray magazine called Coconutty Chicken. It was quite tasty. Mom bought 4 chicken thighs. The chicken is added to a Dutch oven and then coated with 1 can coconut milk, 1/2 cup of cider vinegar, 3 bay leaves and 1/3 cup of soy sauce. The chicken is cooked on the stove partially covered and simmered for about 50 minutes.  For the last 10 minutes, the chicken is removed from the pot and placed in the oven at 400 degrees F to crisp up the skin. While that is happening, the pasta (Mom cooked orzo…) is cooked. During the final 2-3 minutes, spinach is added to the sauce in the Dutch oven and wilted. Everything was plated as follows: orzo on bottom, chicken thigh and then the sauce over everything. This was an amazing meal! The combination of coconut milk, cider vinegar and soy sauce created an amazing sauce. All four of us felt like we would definitely eat this meal again!
