Mom made a delicious meal tonight. We gave her a recipe that we found in Cooking Light called Italian Meatball Sliders. It was easy to make and she served it with a salad that was recommended. The sliders are made by sauteing some shallots and garlic in a skillet. Then these ingredients are mixed with 1/3 cup of ricotta, 1/4 cup panko crumbs, salt, pepper, 1/2 lb of italian sausage, 1/2 lb ground pork and 1 egg. All of this is mixed together and made into meatballs. Then the meatballs are flattened into mini-burgers. The meatballs are cooked in the skillet and until done. The mini-burgers are served on “slider” buns (We just used dinner rolls) along with a simple salad made of spinach, lettuce, red pepper, onion with a simple vinaigrette dressing. It was a terrific meal! We are very grateful to Mom for making it for us.  This was definitely a great twist on the typical hamburger.
