Tonight we needed to come up with a new meal since TJ was not feeling well for most of the day. We had already pulled out some rotisserie chicken so I just cut up some bok choy, carrots and scallions. Then I added some frozen stir-fry vegetables that we had in the freezer. While the jasmine rice cooked in the rice cooker, I cut up all the veggies, set the table and then threw everything in the wok. It was really easy and quite tasty. To add some flavor to the mix, I pulled out our container of Mr. Yoshida’s sauce and added some of that to the vegetables while I cooked them in the wok. All in all, it took me 30 minutes to get a decent meal on the table. Not too bad!!
