This recipe was delicious! Paula cooked it for dinner tonight. She picked it out of our most recent Cooking Light and improvised since we did not have all the ingredients. The recipe call for cooking some chicken breasts in the oven at 350 degrees after sprinkling them with some salt and pepper. Before baking the chicken breasts, they were browned in a skillet. While the chicken cooked in the oven, Paula sautéed some garlic and an onion from the farmer’s market for about 1-2 minutes. Then some chopped plum tomatoes and tomato paste was added to the skillet and cooked for 1 minute. Next 1/2 cup of chicken broth was added and any browned bits were scraped up. Finally 2/3 cup of balsamic vinegar was added and the entire mixture was cooked on low for about 15-20 minutes until it was reduced. Paula made some Farro that we had in the cupboard along with a salad and the dinner was complete. There was so much sauce and extra Farro that we will have this meal again next week! When the recipe is as good as this, then leftovers are a great idea!
