I made us a really easy meal tonight. I found it in the recent (June 2012) Cooking Light. Called Chicken and Bean Burritos, it was incredibly easy to make! All I had to do was cut up 1-2 cups of rotisserie chicken, add 1 can black beans, 1 tsp chili powder, 1 tsp. cumin, 1 clove garlic, 1/2 cup chopped onion and mix together. Then tonight we pulled out some flour tortillas, added the stuffing and some cheddar cheese (although the recipe called for monterey jack…) and warmed it all up. We topped ours with salsa. It was excellent and fast!
