Tonight Theodore made us Kefta Patties with . He picked this recipe out of Cooking Light during the ride home from our holiday trip yesterday. The recipe involved making hamburgers with some cilantro, parsley, ginger, coriander, cinammon, salt and cumin. These spices really added some zing to meat. Then he made a cucumber salad (and thanks Theodore for making mine with sliced zucchini instead!).First the vegetables were marinated slightly in some rice vingear. Then the salad dressing was made with some plain greek yogurt, lemon juice, and black pepper. All of this was combined together and it made for a light, tasty meal. We served up the burgers on hamburger buns. Paula put some of her cucumber salad on top of the burger and loved it. The burgers and salad were enjoyed with some fresh corn and it was a terrific summer meal!
