Theodore made a special meal for us tonight. We had a recipe that he picked out of one of the Rachel Ray magazines on the kitchen counter, Sausage Rolls with Spinach Salad. This was really delicious. Everyone enjoyed it. The only problem, at least from the standpoint of making it on a typical weeknight, is that it was a little time consuming. But it was definitely worth the effort. Italian sausage is mixed with bread crumbs and chopped red pepper. This is all wrapped up inside some puff pastry and baked in the oven. The spinach salad is pretty simple. It is just spinach and sliced red bell pepper with a simple vinaigrette. The dressing is made with olive oil, lemon juice, mustard, salt, and pepper. All in all, it was a terrific meal. It served as our weeknight meal but this could definitely be put out on the table for a “special” occasion as well!
