Theodore started cooking dinner for us again tonight. He made my mother’s meat loaf along with some noodles and fresh corn. This was a terrific meal to get us to feel like we are back home. Talk about comfort food! Everyone has their own meat loaf recipe but we really love the one that my mother passed along to us. We use a pound of ground beef, 4-oz tomato sauce, 1 medium onion, chopped, 3/4 cup of bread crumbs, and 1 egg to bind it all together along with some salt and pepper for taste. It is very delicious! Theodore and Paula eat their pieces with ketchup but I prefer mine plain or with a little hot sauce sprinkled on top. All in all, it made for a terrific meal, especially since we were able to enjoy some fresh corn that Paula had picked up at the grocery in the morning. It was fun to be on holiday but it was also great to be eating at our own table again!
