We also had some chilled tomato soup that he had made earlier this week. It was a recipe that I gave him from Cooks Illustrated magazine. It was really delicious. Half of the tomatoes were roasted along with some shallots before being combined with the rest of the tomatoes and other ingredients to make the soup. This one was even simpler than the Moroccan gazpacho that we had earlier this summer. You just roast tomatoes, garlic, shallot. Then puree in a blender with the rest of the tomatoes, paprika, olive oil and salt. Finally add some balsamic vinegar for taste. This recipe really brought out the flavors of the tomatoes! Delicious and I recommend it while summer tomatoes are still available!
