Tonight Paula and I were on our own so we made it really simple. We just dipped some tilapia fillets in egg and covered them with panko crumbs and threw them in the skillet. After 10 minutes and one flip, they were done. We had some of Theodore’s potato salad leftover and so we served that on the side. It made for a simple meal, which was excellent since it had been a long week at work for both of us. As I have written before, leftovers can be so helpful and thus they are worth keeping around. You never know when you will need them!
