We ate a my mother’s house tonight. As usual, I found a recipe for her and she just made it for us. This time I found a simple recipe in Cooking Light. It was called Fast Chicken Chili. She did not need to do much to make it except buy the ingredients and throw them in the pot. Here is what you do: First, heat a Dutch oven over medium-high heat and add oil. While the oil is heating, sprinkle 1 pound of chicken (that has been cut up into pieces) with 1/4 teaspoon salt. Once the oil is hot, add the chicken and sauté for 4 minutes. Add onion along with some cumin, oregano and coriander and sauté for 3 more minutes. Add 2 cups cannellini beans (1 or 2 cans), 1 cup of water, 1/2 teaspoon salt, 1 can chiles (or not if you don’t like heat…), and 2 cups of chicken broth. Bring all of this to a boil. While it is cooking, mash up an additional cup of beans and add to the soup as thickener. Simmer for another 5 minutes. Serve with cilantro and lime as garnish if you want to make it a bit fancier.
