Tonight we ate dinner with my mother. She has just returned from visiting my sisters in NY and so we went over to her apartment for dinner. IT also gave us a chance to catch up with her and hear about her visit. As usual, I gave her the recipe. This time I chose a recipe from the October 2012 issue of Cooking Light. Penne Rigate with Spicy Sausage and Zucchini in a Tomato-Cream Sauce. That is a mouthful and this dish provided more than just a mouthful. It made a lot but since we are always hungry for dinner, that was a good thing! I cooked the sausage and cut up the cauliflower. Yes, we made a substitution since TJ is not a fan of zucchini. But the cauliflower gave a nice flavor to the pasta casserole. Mom mixed up everything and cooked it in her oven and we enjoyed a filling and delicious meal. Besides substituting the cauliflower, Mom cooked it all in one casserole pan instead of several smaller ones.  But it was still very tasty! This meal really did not take a lot of effort and it would be a good one to have again when the weather starts to really get cold. The pasta makes it a filling meal and it definitely warmed us up. Thanks Mom for taking the time to put it all together and enjoy it with us!
