Thanks TJ for a great meal! He made Chicken and Vegetable Soup while he had some spare time on Saturday and we enjoyed it tonight. I found the recipe in the October 2012 Cooking Light. The soup is made by sauteeing some onions in a Dutch oven until they soften. Then you add chopped carrot, garlic black pepper, salt and thyme. Then you add 3 cups of chicken broth and a can of fire-roasted diced tomatoes. All of this is brought to a boil. Then you add some orzo pasta and a cup of green beans. Finally some chopped chicken (we used rotisserie chicken to make it easier…) is added and everything is cooked until done, about another 5-7 minutes. The soup was served with some shaved Parmesan cheese for additional flavor.
