Tonight Theodore made us dinner. He chose Steak with Romesco Sauce, which was a recipe from his October 2012 Bon Appetit magazine. He made the romesco sauce yesterday so we just needed to cook the steak and make the mashed potatoes. It was quite tasty! I bought some sirloin steaks at the farmer’s market yesterday (since the skirt steaks that were called for were not available…) along with some white potatoes. Theodore made a rub for the steaks that included ground fennel seeds, pepper, salt, garlic powder and cayenne. It really added flavor to the steaks and made for an interesting way to serve up steak. Paula even added the extra rub to the mashed potatoes and that gave them an extra bit of flavor! The romesco sauce was made with almonds, roasted tomatoes, garlic, red wine vinegar and some bread for thickener. Between the rub and the sauce, both made for a great way to improve a medium cut of meat. You did a great job Theodore! Mom and I really appreciate it!
