I had to stay at school for parent conferences tonight and the faculty was having a pot luck.  I decided to bring minestrone soup. My mother’s recipe is delicious. The ingredients are olive oil, 1 large onion, 1 garlic clove, 3 quarts vegetable broth, 3 diced carrots, 2 small potatoes, 1 can kidney beans, 1 can tomato paste, 1 leek (sliced), 1/2 teaspoon of thyme, 1 1/2 cups of macaroni, 1 bay leaf, 1/2 lb of sliced zucchini, 2/3 cup of frozen peas, and 1/2 cup of parsley. The onion and garlic are sauteed until moistened. The stock and the beans, potatoes, leek, an spices are added to the pot. The pot is covered and brought to a boil. Then it is simmered for an hour.  Then you add the macaroni and simmer for 2o more minutes. Finally add the zucchini, peas and parsley. Cover and simmer for a final 20-30 minutes and you have an incredibly delicious soup for a fall or winter evening! Best of all, it is is so very easy to make!
