Tonight we had Chicken with Honey Beer Sauce. Theodore picked out this recipe last week from the September Cooking Light and we did not make it because we ended up going to my mother’s for dinner. The recipe was quite easy to make. You cook some boneless chicken breasts in a skillet after sprinkling them with salt and pepper. After you remove the cooked chicken from the pan, you add some sliced shallots and cook them for 1 minute. Then you add the beer and honey mixture, which includes 1/2 bottle of beer, 2 tablespoons soy sauce, 1 tablespoon Dijon mustard, and 1 tablespoon of honey. This is brought to a boil while scraping the pan. After the mixture has reduced, return the chicken to the pan and turn to coat with the sauce. Serve with any sides that you like. We had ours with some potatoes and a green vegetable.
