Tonight I made a simple meal for Paula and myself. It was a recipe that I found in the current Rachel Ray magazine called Chard, Bean and Sausage Stew. It was really simple to make. In a large pot, heat some olive oil over medium heat. Add 1 chopped onion and cook until golden brown, about 70-8 minutes. Add the sausage (I just chopped up two links of chicken sausage that we had in the freezer…) and cook for 3 minutes. Stir in 4 cloves of minced garlic and 1 tsp. of paprika. Cook for an additional minute. Add 1 can of diced (or crushed) fire-roasted tomatoes and bring to a boil. Cook stirring until most of the moisture is gone (about 2-3 minutes). Add 4-6 cups of water and bring to a boil. Then add 1 can of cannellini beans, rinsed and simmer for 15 minutes. Finally add the sliced swiss chard, cook for about 10 minutes until it softens and serve. It was easy and very delicious! Good meal to make on a busy day…
