Tonight Theodore and I cooked a meal from the latest Rachel Ray magazine. It was Gingery Fish and Noodles. I wrapped a piece of cod inside some aluminum foil after Theodore rubbed it with some ground ginger and chopped scallions. While the fish cooked in the oven at 4oo degrees for about 10 minutes, we cooked a box of rice noodles. As the noodles cooked, Theodore heated some olive oil in a large skillet. We added some chopped garlic and then threw in baby bok choy, sliced red pepper, and some snow peas. We cooked this for about 4 minutes, then added the rice noodles and 2 tablespoons of soy sauce. All of this was plated and we removed the fish from the oven and placed it on top of the noodle-vegetable mixture. Really easy and really tasty!
