Paula took 3 tilapia fillets out of the freezer this afternoon. She coated them with some panko bread crumbs and cooked them in the skillet. It was delicious and easy. And it allowed us to enjoy fish (instead 0f meat) on Friday for Lent. She also made some noodles (Noodle-Roni comes in handy sometimes…) and cooked butter beans that he had in the freezer from the farmers market. It was simple yet tasty meal. Theodore and I appreciated it when we finally got home from school after he finished his track practice. It was definitely a treat for the two of us although we unfortunately could not enjoy the meal with Paula since she had to go to work.
