Tonight Paula and I made Taco Soup, a recipe that we got from my mother. This was not only a really tasty meal but it was incredibly easy to make! First, you brown 1 pound of ground beef in a stock pot. After the meat is browned, remove most of the fat. Add 1 medium onion, chopped and cook until the onion softens, about 5-6 minutes. Add 2-3 cloves of minced garlic and cook for another minute. Add 1 package of taco seasoning and stir it until the meat is coated with the seasoning. Add 1 can kidney beans (undrained), 1 can corn (undrained), 1 can garbanzo beans (undrained), 1 can of sliced/chopped olives and 1 large (28-ounce can) crushed tomatoes. Mix all the ingredients and simmer for 10-15 minutes and you have a meal. Add a handful of Fritos corn chips to a soup bowl and cover with the soup. Top with a dollop of sour cream and hot sauce if desired. Enjoy! All of us thought that this was a great meal and we would gladly eat it again when we needed something fast!
