My mother cooked dinner for all of us tonight. She made two of Theodore’s favorite dishes in order to send him off with another favorite meal, meat loaf and her homemade macaroni and cheese. While the meal was made especially for Theodore, all three of us enjoyed her home cooking. The meatloaf is easy to make – 1 pound ground beef, 8 ounces tomato sauce, 1 egg, 2/3 cups of bread crumbs, and oregano, salt and pepper to taste. The meat is cooked for about an hour at 375 degrees. We gave Mom a new pan for cooking meat loaf at Christmas and it works quite well. I don’t really know the recipe for her macaroni and cheese. I just know that it tastes delicious. She takes macaroni, 1 can of chopped tomatoes and makes a cream sauce. All of this is mixed together and seasoned with a variety of spices. Then she covers everything with shredded cheddar cheese and bakes it in the oven. I think that the oven is set at 350 degrees. When the cheese has melted and is bubbling, then all is ready. After this meal and the one on Monday, Theodore should be ready to head off to China tomorrow morning with lots of good food memories.
