This afternoon was TJ’s last track practice. Since he was practicing, we ate at school once again. Last night, TJ rubbed some beef tenderloin tips with 1/4 finely chopped red onion, 2 tablespoons chopped cilantro, 1 1/2 teaspoons of lime juice, 1 tablespoon olive oil and 1/4 teaspoon salt. He let the meat sit in the refrigerator overnight. When Paula got up today, she cooked some sweet potatoes in the microwave. She also cooked the meat in a skillet on the stove for about 3-4 minutes. Then she packed up everything along with some fresh asparagus and brought them to school. We cooked the asparagus in the microwave in the teacher’s lounge and then ate dinner one more time in my classroom. The steak and potato were delicious even if the setting was the most enjoyable. But the good thing was that all three of us were able to enjoy dinner together.
