Theodore and I were busy around the house today. We did a lot of work to clean the house, both inside and outside. When it came time for dinner, we were ready to cook something very easy. Paula picked out the following recipe from the July 2013 issue of Rachel Ray and it was the perfect recipe to cook today. Grilled (Fish) with Blackberry Sauce. Theodore made the sauce when he was taking a break from some of the work. All you have to do to make the sauce is mix 2 cups of fresh blackberries, 1/4 cup blackberry jam and 1 teaspoon sherry vinegar. After you mix all of this up, mash up the blackberries with a potato masher to create a delicious sauce. Keep it refrigerated until you are ready for the meal. The original recipe calls for cod but since Paula doesn’t like strong fish like that, we used some tilapia instead. Paula sprinkled some summer savory on her piece while TJ and I sprinkled some cayenne pepper on our pieces. We cooked the fish on the grill for about 4 minutes on each side. (The time may vary depending on the fish that you use.). It was delicious! We had our fish with some fresh corn on the cob and a salad. Excellent summer meal!
