Tonight we had a really delicious meal. Peanut Chicken Noodles. It was recipe that Rachel Ray magazine called 19 Fast Chicken Ideas. The recipe definitely lived up to its billing. It was fast! But even better, the final product tasted great!

Theodore cooked most of it since I was back at work to get ready for school. It was a really easy meal to prepare! Preheat grill or grill pan over medium- high. In our case, we just cut up 1 pound of chicken breast and cooked it in a wok since it was pouring outside. Season chicken with salt and pepper. Cook the meat in the grill 4 to 6 minutes per side or until the meat is cooked.  (Since we cooked the meat in the wok, we heated the wok on high, added some oil and cooked the meat until done, 2-3 minutes.) In saucepan over low, whisk 3 tablespoons peanut butter, 3 tablespoons soy sauce, 2 tablespoons honey, 2 teaspoons lime juice, and 3 tablespoons toasted sesame oil until warm. This will take about 2-3 minutes. Toss the sauce with the noodles, chicken and 1 thinly sliced bell pepper. Serve and enjoy!
