Tonight we had Mom’s meatloaf for dinner along with our new favorite coleslaw., Corn Bacon Slaw. I wrote about this recipe about a week ago. All three of us just loved the blend of flavors that we decided to make it again this week. Paula had received a head of cabbage as a gift and we just used that to make the slaw. Mom’s meatloaf recipe is one of those comfort foods that we really enjoy. It is easy to make. Just take 1 1/2 pounds ground beef, 1 medium chopped onion, 1 cup tomato sauce, 1 egg, 2/3 cup of bread crumbs and some italian seasoning. Mix everything together and bake for about an hour at 375 degrees. It is so delicious. And best of all, we always get leftovers! Tonight started our fall ritual of eating at school while TJ is running cross-country and Paula is working. This way we get to spend a little time together each day. Paula made most of the coleslaw on Sunday. (She cooked the bacon this afternoon so it would have some crispness when we bit into the slaw…). All in all, it was a delicious meal… even if the location was not the most ideal. My classroom is not the most pleasant place to eat a meal…
