Paula wanted to try a new recipe for breakfast this morning. Huevos Rancheros Wraps. She discovered this recipe while looking through one of our magazines, Cooking Light from September. It was really tasty and best of all, she was able to make each wrap individually with ingredients that each of us liked. First, she mixed 1 can of corn, 1 can of black beans, 1 chopped tomato, and 3 tablespoons of green onions along with some salt and pepper to taste in a medium microwave-safe bowl. Microwave at HIGH 1 minute. While she was making this combination, I made scrambled eggs. When the eggs were cooked, Paula laid out a flour tortilla on each plate. Then she added the corn-bean mixture. I topped this with the scrambled eggs. Paula topped with cheese or jalapenos, depending on the person. Then she rolled up the tortillas and we had a great breakfast!
