Tonight we enjoyed the Cuban Pork Shoulder with Beans and Rice that Paula made two weeks ago. We had frozen half of the dish and kept it until we needed to make a fast meal. Since Paula was working and needed to take a nap in the afternoon, it worked out to cook this dish. Paula just had to make some rice when she woke up from her nap before she headed off with all the food so that we could enjoy another one of our many family meals in my classroom after Theodore finishes his track practice. This meal was just as delicious tonight as it was when we first enjoyed it several weeks ago!
