Tonight I made a delicious meal! Pork Cutlets with Orange Gremolata. This recipe was a terrific way to prepare pork tenderloin. That is a tasty cut of meat but if you are not careful, it can get dried out when cooking. This recipe prevented that by adding a tasty sauce or gremolata to go with it.
First, heat a large nonstick skillet over medium-high heat. Place 2 tablespoons of flour in a shallow dish. Sprinkle 1 pound of pork tenderloin (that has been cut into 12 thin slices) with 1/2 teaspoon salt. Dredge the pork slices in the flour. Add 2 teaspoons olive oil to the hot pan and swirl to coat. Add 6 pork slices to the pan and cook 2 minutes on each side or until browned and done. Place cooked pork slices on a platter and cover to keep warm. Repeat this procedure with another 2 teaspoons of oil and the remaining 6 pork slices.
Second, add 2/3 cup of orange juice, 1/3 cup water, 2 tablespoons of orange marmalade, and 2 teaspoons of balsamic vinegar to the pan, scraping the pan to loosen any browned bits. Bring to a boil and cook 3 minutes or until liquid is reduced to 1/2 cup. Stir in another 1/4 teaspoon salt and pepper.
Finally, place 2 tablespoons of fresh chopped parsley, 1 teaspoon of orange rind, and 1/2 teaspoon of minced garlic in a small bowl. Stir with a fork to combine. Spoon orange juice mixture over pork and sprinkle evenly with orange rind mixture.
We served this with a side of orzo combined with 2 teaspoons of olive oil, 1 teaspoon of lemon juice, 2 ounces dried cranberries and 2 tablespoons of fresh chopped parsley.
It was a delicious meal and a treat on a weeknight!
