Paula and I picked out some recipes for the coming week during our trip back from the Outer Banks earlier today. Since I had to take TJ to a doctor’s appointment, we decided to make something simple. Paula found a recipe for “Chinese Chicken Salad” in the June 2014 issue of Rachel Ray’s magazine. It was really easy to make. When we bought groceries, we bought a rotisserie chicken that I de-boned before I left for the doctor. When Paula woke up, she mixed the chicken with a can of mandarin oranges, shredded cabbage (that we had leftover in the refrigerator), roasted peanuts, sliced scallions and toasted sesame salad dressing. TJ made wraps for everyone with some flour tortillas that were in the refrigerator. We enjoyed the meal with some fresh grapes. It was a very simple, very tasty and a perfect meal for a hot summer day!
