Tonight we had Mom’s meat loaf for dinner. Paula made it on Sunday and Theodore put it in the oven when he was home from school due to election day. As always, it was delicious!

If you are interested in making it, here is the recipe… Take 1 1/2 pounds of lean ground beef, 1 cup of Italian-style bread crumbs, 3/4 cup of chopped onion, 4 ounces of tomato sauce, 1 egg and 1 teaspoon of salt. Mix all the ingredients together until blended. Place in a loaf pan and bake at 350 degrees for 50 minutes to 1 hour (or until the meat loaf is cooked through. Let it stand for 5-10 minutes after removing it from the oven before serving.
