Tonight we cooked a recipe that we had a few weeks ago: Chili Chicken with Hominy Hash. I brought back this recipe because we had some leftover butternut squash. The original recipe called for using acorn squash. It tasted just as good with the butternut squash – with the plus that we could use up the leftover squash that was in the refrigerator. This is an incredibly tasty recipe and it is so easy to make, which makes it perfect for a weeknight meal.
