On Sunday, while Paula made cookies for the holiday, I pulled out the Joy of Cooking and made us Split Pea Soup. It was pretty easy and since the weather was turning cold, it seemed like a good meal to have this week.

All you have to do is place 2 cups of split peas in a large saucepan along with 8 cups of chicken broth, 1/2 pound of ham (cut up into bite size pieces), 1/2 teaspoon dried marjoram, 1 cup of chopped carrots, 1 cup of chopped celery and 1 cup of chopped onion and 2 bay leaves. Season with salt and pepper to taste. Bring it all to a boil and reduce heat. Cover and simmer for 3o-45 minutes. Stir occasionally. Discard the bay leaf and it is ready to enjoy!
