Tonight Paula and I made Taco Soup. This was a recipe that we had learned from Mom. As Paula was looking through her various recipes last week, she came across it and we felt like we should make it. It is the time of year when we find ourselves thinking about my mother more than ever and doing things like this make it a little bit easier.
To make this soup, heat a few tablespoons of olive oil in a stockpot. Add 1 medium onion, chopped, and cook until tender. Add 2 cloves of chopped garlic and cook for another 30 seconds or so. Add 1 pound of ground beef and stir to separate. Then cook until browned. Add 1 package of taco seasoning and stir until the meat is thoroughly coated. Finally add 1 can of kidney beans, 1 can of garbanzo beans 1 can of whole kernel corn, 1 large can of crushed tomatoes and 1 small can of black olives. (Important: Do NOT drain the vegetables!) Cook everything to heat thoroughly and then let the soup simmer for another 30 minutes to really bring out the flavors. Serve in a soup bowl with crushed Fritos corn chips in the center along with a dollop of sour cream.
