I saw this recipe in Nigel Slater’s Eat cookbook and it seemed like an easy meal for us, especially since we had all of the ingredients in the freezer.

Cut 1+ pounds of boneless chicken breasts into chunks. Put the chicken pieces in a bowl and toss with 1-2 tablespoons of Chinese five-spice powder. Thinly slice 2-3 garlic cloves and add to the chicken, tossing gently to mix all the ingredients.

Heat 2-3 tablespoons of vegetable oil in a wok and then add the spiced chicken pieces. Fry for a couple of minutes until the chicken is golden. Add 1/3 cup of salted cashews, 1 broccoli (that has been cut up into pieces and 3/4 cup of hot water to the wok. Bring to a boil. Cover with a lid and steam for a couple of minutes until the broccoli is tender. (Note: You will need a spoon for the juices.)

If you want to thicken the sauce, you can add a couple of tablespoons of cornstarch mixed with some white wine into the chicken when you are mixing the pieces with the spice powder.

This was not only easy but it was delicious!!
