Paula made another recipe from Nigel Slater’s cookbook Eat tonight. It was Sausage Lasagna and you only needed 7 ingredients to put together this tasty dish!

Split open 1 or more pounds of sweet Italian sausage, peel off the casings and put the sausage in a bowl. Rub a little olive oil on the bottom of a small baking dish (or spray with nonstick spray). Add several sheets of dried, oven-ready lasagna noodles, broken as needed to make them fit the dish. Coarsely chop about 12 ounces of cherry tomatoes and distribute half of them over the lasagna noodles. Cover with half of the sausage and then another layer of lasagna noodles. Add the remaining half of the tomatoes and then another layer of the noodles. Add the last of the sausage on top of this final layer. Finally, slice 2 large tomatoes and place them on top of the sausage.

Stir 1 tablespoon of Dijon mustard into 1 cup of heavy cream. Season the cream mixture lightly with salt and pepper and then pour over the top of the lasagna. Cover with grated Parmesan cheese. Bake in an oven set at 400 degrees F for 45 minutes. Enjoy!

This was a hearty dish for a meal on the waning (at least we hope…) days of winter!
