Theodore wanted Matzo Ball soup and we had a recipe for matzo balls from the March 2015 Food Network magazine. It was an easy meal! Just make the matzo balls and cook them in chicken broth. We added some egg noodles to make the meal a little more filling.

Here is the recipe for the matzo balls (and they smelled really good when I made them on Saturday!). Mix 1 pound of ground chicken, 1/2 cup matzo meal (I only found matzo meal in 5 ounce boxes so I mixed in the entire contents of that box…), 1/2 grated onion, 2 tablespoons of chopped dill, 2 tablespoons of chopped parsley, 1 egg, 1 egg white and 2 teaspoons of kosher salt. Season with a little ground pepper.

Form the chicken mixture into 1 inch balls. We stored them in the refrigerator. When it was time to enjoy the meal, we simmered the meatballs in about 6 cups of chicken broth along with 1 chopped carrot and 1 chopped celery stalk for about 5 minutes. While the meatballs were cooking, we cooked the egg noodles and it was a delicious meal!

We may not be Jewish but we know good food when we taste it! This was delicious. I had enjoyed it growing up in New York and Theodore had discovered it on some of our trips to New York. It is a really tasty comfort food!
