Paula made a simple recipe for the three of us tonight. I found it in the April 2015 issue of Rachel Ray magazine. The recipe is called Green Goddess Tilapia on Orzo. All three of us enjoyed it. Paula made me a piece of salmon that tasted just as good with the simple sauce that went with the orzo and the fish.
In food processor, blend 4 ounces of softened butter, 1/3 cup chopped fresh parsley, 3 tablespoons of chopped fresh tarragon, 1 chopped scallion, 1 tablespoon white wine vinegar and 1/2 teaspoon of hot sauce. Season the fish with salt and pepper and then coat with flour. In large skillet, heat oil over medium-high. Add the fish and cook until golden, about 3 minutes per side. (Paula cooked the salmon a little bit longer!) In a bowl, toss 10 ounces of cooked orzo with half of the herb butter and then divide among 4 plates. Top the fish with the remaining herb butter and serve.
Like I said, this was relatively easy and very tasty!
