We had Mom’s meat loaf tonight. We had not eaten it in quite a while and it was calling out to me. Paula made enough of it for us to enjoy this week as well as next week. Mom’s meat loaf is such a simple and easy meal. It is definitely one of our favorite foods.

If you are new to my blog and might be interested in making it, here is the recipe… Take 1 1/2 or 2 pounds of lean ground beef, 1 cup of Italian-style bread crumbs, 3/4 cup of chopped onion, 4 ounces of tomato sauce, 1 egg and 1 teaspoon of salt. Mix all the ingredients together until thoroughly mixed. Place in a loaf pan and bake at 350 degrees for 50 minutes to 1 hour (or until the meat loaf is cooked through). Let the meat loaf stand for 5-10 minutes after removing it from the oven before serving.

Tonight we had it with macaroni and cheese and some green beans. That was the easiest since we had to have the meal at school – Theodore’s track season is still on and Paula had to work. But in all honesty, it would have been better if we could have made Mom’s macaroni and cheese to go with it…But that will be next week when we have the meat loaf for the second time.
